Pizza Now started with a simple obsession: a real New York slice.

Born in the old Jewish-Italian delis and slice shops of NYC — big 20-inch hand-tossed pies, thin crust, baked screaming hot on stone, sold by the wide slice on wax paper so you could fold it and eat it walking. Crisp edge, soft underneath. Fast, no frills, honest.

We brought that to the Western Slope. Whole-milk mozzarella (dairy farm kid had to), pecorino romano, house red, olive oil. You'll hear "Pick your slice!" and if it's a little dark — "It's Jersey Style, folks!"
